The Gateway Salad

So I work in a mall today.  The mall I work in today is nicer one, and nicer malls usually mean healthier options.  Well, there is in fact a really nice salad bar spread here.  I knew that before coming in so I kept telling myself that I’ll be going there for lunch and making better choices today.  No more excuses, no more fries, not even Chipotle today.  Chipotle isn’t, of course, horrible…however I’ve eaten Chipotle 3 days in a row and that’s a lot of sodium and cheese and and sour cream and and …

There was a time in my life when I used to eat a loaded, healthy salad consistently every single day.  It was noticeable, people I ate lunch with every day would make comments on how “healthy I was”.  This afternoon, I had a really hard time getting excited over a cold salad honestly.  Especially when the salad place happens to be attached to my friend, Chipotle.

So I negotiated with my desires and decided I won’t do anything extreme.  Extreme as in a spinach salad with no croutons.  I decided to get romein leaves, between the veggies I added lots of cheese, those sesame stick things, different seeds, skipped the bulky stuff like cauliflower and broccoli florets, and I even put some cesaer dressing.

My salad might sound like a horrible idea to Jenny Craig, but I’m calling it the gateway salad!
